Thai Pineapple Fried Rice (KHAO PHAD SAPPAROT)

This is a Thai dish which is rich in flavor, made with chunks of pineapple and coconut milk. Small pieces of sweet pineapple and juices from fresh meat give Pineapple Fried Rice a distinctive scent, who's doesn’t like ??? Moreover, it's served in a bowl of the pineapple itself which add extra points to this dish.
This cuisine can be ordered easily at Thai restaurants, but it can also be made in your home kitchen. In cooking this dish, it’s better if you use fresh pineapple... because it tastes more delicious (sweet, crunchy, and slightly sour). But if it is difficult to get fresh pineapple, then you can use canned pineapple.

For the meat, you can select according to taste --- beef, shrimp, chicken or other. To enrich the color, texture and taste, cashew nuts, raisins and peas can be added too. Don't forget the curry powder, which makes the rice a yellow tinge and the spicy taste is delicious. Finally, the addition of soy sauce and fish sauce gives a savory sense in this cuisine.

In this recipe, I boiled meat (shrimp & squid) first before making and used Jack Bean because I forget about buying cashew when shopping ^_^.

Ingredients

  • 450 grwhite rice
  • 100 grpineapple, cut to taste
  • 150 grmeat (beef, chicken, shrimp etc...), cut to taste
  • 1egg, made scrambled
  • 30 grcashew nuts, roasted/oven
  • 20 grraisins
  • 50 grcarrots, cut into small squares
  • 50 grstring bean, cut to taste
  • 4 clovesgarlic, finely chopped
  • 30 gronion, thinly sliced
  • 2leeks, cut into 1 cm pieces
  • 1/2 tspginger, grated/chopped finely
  • 50 mlcoconut milk
  • 1 Tbspcurry powder
  • 1 Tbspsoy sauce
  • 2 Tbspfish sauce
  • 1/2 Tbsptomato sauce
  • 1/4 tsppepper powder
  • to tasteSugar and salt
  • Vegetable oil / olive oil for frying
  • COMPLEMENTARY INGRED.:
  • 1red chili, sliced
  • 1 tbspfried shallots
  • 2 stalkscelery

Steps

    Heat a little oil and saute garlic, onion and ginger until fragrant. Add all meat, carrots, pineapple, and string bean. Cook until the vegetables soften.

    Add white rice, curry powder and scrambled eggs then mix well. Add thick coconut milk, stir again.

    Then add cashews, raisins and chives. Stir well.

    Enter sweet soy sauce, fish sauce, tomato sauce, pepper powder and salt. Adjust taste.

    Serve with a sprinkling of fried shallot, red pepper and celery.
