Pineapple Shrimp Fried Rice

Cooking Instructions

Prep the Pineapple:
Cut the pineapple 1/3 of the way lengthwise, using the larger section as a bowl. Scoop out the flesh, leaving about a 1/2-inch thick shell. Chop half of the pineapple flesh into small chunks and set aside.

Make the Sauce:
Mix the salt, curry powder, fish sauce, oyster sauce, and water together in a bowl.

Cook the Eggs:
Heat 1 tbsp of cooking oil and 4 tbsp butter in a large pan or wok.Scramble the eggs, then remove and set aside.

Cook the Shrimp:
In the same pan, add 1 tbsp of oil and cook the shrimp until pink and opaque, about 2-3 minutes. Remove and set aside.

Combine Everything:
Add the cooked rice to the pan, breaking up any clumps. Stir in the diced carrots, peas, corn, scrambled eggs, shrimp, pineapple chunks, cashews, and raisins (if using). Pour in the sauce and stir until everything is well mixed and heated through, about 3-4 minutes.

Serve:
Scoop the fried rice into the hollowed-out pineapple and serve warm. Enjoy!
