Fasting mango shushi

As we all know Is is about to come and whole day we celebrate this festival with fasting food and recipes..I am die heart mango lover and try this recipe of fellow friend bejaya Sinha di with samo rice. Shushi is Japanese preparation made with sea food , vinegered rice and veggies. I made just opposite version of shushi I mean not only vegetarian but fasting style. Wrapped samo rice with mango layers..

Fasting mango shushi

Wash and soaked samo rice for at least 30 minutes. Heat a pan add milk add samo rice add sweetness. Cook it till samo rice cooked fully and become soft. If needed add little milk more. Adjust sweetness. Switch off the flame and let rice cool. It took 5-10 minutes.

Now peel mango and peel thin slices with help of peeler. Sliced grapes and strawberries. Keep it aside

Take cling paper. Arrange it on platform or on plate.now arrange mango slices over it one by one. With help of milk or water spread it carefully over mango slices. Add sliced grapes strawberries inside samo rice.

Roll it carefully and tightly with help of cling wrap. And keep it in fridge for 15-20 minutes.

After 20 minutes of it chilled. Take it out from fridge. Open cling and cut it in shushi rolls with sharp knife. Garnish it with mango and kiwi, strawberries sliced. Serve chilled.

*Fruits can use as per your choice like mango, strawberries, kiwi, blueberries.

* arrange samo rice with help of water or milk if it becomes dry.

*instead of samo rice can use poni or Jasmine rice.. sweetness can adjust as per your taste.
