Courgette Patties with Tzaziki Dip

Hello everyone, The other day I was chatting with a really sweet new blogger friend, in regards to recipes with Courgettes/Zucchinis. She mentioned that her garden is filled with Courgettes, and besides soups she really didn’t know what else to do with them. So, because I know she is a very busy bee, I am posting another recipe that I think she will enjoy, as I hope you will too. 🙂

This appetizer goes great with the famous Tzaziki Dip, which I think or I am sure most know of, so to accompany this absolutely delicious Courgette dish, I made the traditional Tzatziki dip. This dip recipe varies from region to region in Greece, others add dill, other add capers, personally the taste is the same as long as there is cucumber, olive oil, and garlic it’s Tzaziki.

The drinks that usually accompany these types of appetizers is Ouzo or Tsipouro, but again it could be beer, (I don’t drink Ouzo or Tsipouro…I am more of a wine person 🙂 ) it all comes down to what you enjoy drinking. 🙂

Ingredients

  1. 1kilo Courgette/Zucchini
  2. 2Eggs
  3. 1/4 cupDill chopped
  4. 1/4 cupParsley choppped
  5. 1/4 cupMint choppped (optional)
  6. 150 gramsSelf-rishing flour
  7. Salt
  8. Pepper
  9. Vegetable Oil
  10. Tzatziki Dip
  11. 1Cucumber
  12. 1/2kilo Yogurt
  13. 3-4Garlic cloves
  14. 1/2 cupOlive Oil
  15. 1 tablespoonVinegar (white)
  16. Salt
  17. Pepper
  18. Dill or Parsley (optional)

Cooking Instructions

    Wash Courgette and pee.

  2. 2

    Grate and set in the sink so that all the excess water can drain.

    In a large bowl add in the Courgette, herbs, eggs, flour, salt, pepper and combine. Then with a spoon scoop one tablespoon of the mixture and set into the frying pan.

    Each side needs about 5 minutes to fry. Turn over when one side is golden brown.

    Tzatziki Dip Preparation

    Cut Cucumber into 4 pieces, and spoon out the seeds.

    Next grate the cucumber

    Grate garlic in a multi-blender

  9. 9

    Add into the cucumber all the ingredients and mix….:)

    Simple to make and rather quickly…
