  1. 2 TablespoonOlive Oil
  2. 1 teaspooncumin seeds
  3. 1Large Onion sliced
  4. 2 TablespoonGinger, Garlic and Turmeric Paste
  5. 2 Tablespoonvegetable masala (Pau Bhaji Masala)
  6. 4Green Chilis sliced
  7. 1Medium Potato, peeled and boiled
  8. 1Large Carrot, sliced thin and blanched in salt water
  9. 2Zucchini, sliced
  10. 1 cupString Beans, blanched in salt water
  11. 1 canMushrooms, optional
  12. 2Fresh Tomatoes
  13. 4 clovesFresh Garlic, sliced

Steps

30 mins
  1. 1

    Heat Oil in a large pan. Add cumin seeds. Cook 1 minute. Add onions and cook 3 minutes. Add vegetable masala and cook 1 minute.

  2. 2

    Add everything (except potatoes) in pan and add 2 tablespoon water. Mix and cook 2 minutes. Reduce heat and for 10 minutes covered.

  3. 3

    Add Potatoes and cook for 5 more minutes. Check for salt and serve.
