So easy, you won't believe it!
So I needed something that didn't require too much work time, cook time didn't matter. Found an easy recipe buried in some website, but it needed a couple modifications to give it some flavor. I think next time I will cut the onion down, and add some green pepper also. Also some heat would be nice, but my wife liked it like this.

Ingredients

  2. 1 lblean ground beef
  3. 1 envelopeonion soup/dip mix
  4. 1 cancream of mushroom soup
  5. 1 canwater (I used about 85-90% soup can full)
  6. 1 cupuncooked rice (not instant, I used parboiled brown rice)
  7. 1medium chopped onion
  8. ground black pepper
  9. 1 tbspItalian dried spice (optional)
  10. finish
  11. 1 cupshredded cheese
  12. garnish
  13. chopped green onion (optional)

Cooking Instructions

    What you need, a bowl and casserole dish, both about 2 quarts (2 liters) in size

    Preheat oven to 350°F

  3. 3

    Break up your ground beef into the bowl

  4. 4

    Just add the rest of the ingredients to the bowl except cheese and green onions if using.

    Just mix the ingredients in the bowl together

    Give your casserole dish a spray with oil. Dump your meat mixture into the dish.

    Even the top out. Cover and place in oven. MAKE SURE IT IS COVERED. If it is not covered your rice will not cook!

    Bake for one hour.

    Remove from oven, uncover, sprinkle cheese on top. Place back in oven (uncovered) until cheese is melted and optionally browned to your desire.

    Remove from oven, cover, let sit for 10 minutes to let the rice settle and the whole thing to solidify some before serving.

    Serve, garnish with green onion, cilantro or parsley if desired.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.

Made this tasted good but the rice wasn’t done even though I cooked for full hour probably won’t make again
