Ingredients

30 mins
4 servings
  • 500 gpork diced into bitesized pieces
  • 2 tbspgluten-free / plain flour
  • 2 tbspoil plus extra if required
  • 1onion, chopped
  • 2red apples, cored and thickly diced
  • 300 mlhot chicken stock
  • 2 tbspwholegrain mustard
  • 2bay leaves
  • 1 tbspdried chopped parsley
  • 1 tspbrown sugar
  • To tastesalt & pepper

Steps

30 mins
  1. 1

    Season the flour with a wee shake of salt and pepper then toss the pork in the flour

    Heat 2 tbsp oil in a large pan and brown the pork in batches, removing with a slotted spoon when browned

    Fry the onion until softened adding more oil if required

    Once softened, add the apple pieces and fry until golden

    Add the pork back to the pan

    Mix the stock, mustard, bay leaves, parsley and sugar together then add to the pan

    Let simmer for 20 minutes until the pork has cooked through and the sauce has thickened. Remove the bay leaves and discard

    Serve with boiled potatoes and seasonal veg or with white rice
