A hearty but healthy supper. I have another similar recipe posted which contains much more vegetables but some people prefer theirs on the side, hence this version! My kids funnily weren't overly keen on the apples which I thought they'd like the best so next time I think I'll just add some applesauce to the pan

Season the flour with a wee shake of salt and pepper then toss the pork in the flour

Heat 2 tbsp oil in a large pan and brown the pork in batches, removing with a slotted spoon when browned

Fry the onion until softened adding more oil if required

Once softened, add the apple pieces and fry until golden
- 5
Add the pork back to the pan

Mix the stock, mustard, bay leaves, parsley and sugar together then add to the pan

Let simmer for 20 minutes until the pork has cooked through and the sauce has thickened. Remove the bay leaves and discard

Serve with boiled potatoes and seasonal veg or with white rice
