Georgian Khachapuri

This is without a doubt my favourite food in the world. I used to eat it all the time in Russia, where Georgian food is very popular. Somewhere between a pie and a pizza, this is just a big pile of cheese goodness.

This is without a doubt my favourite food in the world. I used to eat it all the time in Russia, where Georgian food is very popular. Somewhere between a pie and a pizza, this is just a big pile of cheese goodness.
Steps

Add the yeast, sugar, salt and water to a large bowl. Mix well.

Add the oil and mix again. Sieve in the flour, mix and knead well with the heel of your hand.

Put the dough in a bowl that had been wiped with a little bit of oil. Cover with cling film and leave aside to proof until doubled in size (about an hour).

Grate your cheese into another bowl. Add a tbsp flour and one egg white to the cheese. Mix well and leave to one side.

Preheat your oven to 240c.

Split the dough in half. Rolls each half out into a circle.

Roll both circles in from two sides

Pinch and twist the ends together and roll the middle back out to form a boat.

Sprinkle flour on a baking tray lined with baking paper. Place your boats on the baking paper and fill with the cheese mix.

Bake until dough is firm and golden and cheese is melted (approx 20 Minutes)

Remove from the oven and create a small well in the cheese of each khachapuri. Add an egg yolk to each well.

Return to the oven for another 5 minutes.

Remove from oven and use a small amount of butter to rub on the dough.

Serve and enjoy. Be careful - it will be extremely hot!
