Ingredients

4 servings
  • 300 gsalmon
  • 250 mlcoconut cream
  • 1onion diced
  • 2green pepper
  • 2tablespoons diced ginger
  • 3tablespoons garlic chopped
  • 3tablespoons Thai red curry paste
  • 2tablespoons tomato sauce
  • 3tablespoons coconut oil
  • 1/2tablespoon palm sugar

Steps

  1. 1

    Add coconut oil in pan and heat add chopped vegetables except garlic and fry for 10 minutes till soft add garlic and palm sugar

  2. 2

    Once sugar is dissolved add the red curry paste and fry for 4 minutes. Add all of coconut milk and let simmer for 2 minutes

  3. 3

    Add salmon and let sauce simmer till thickened. Add salt and pepper to taste

  4. 4

    Serve with basmati rice. Enjoy!
