This is ideal for anyone on a keto diet and managing calories. I've modified the original recipe by reducing the butter and cheese. It is so good.

Preheat oven 400

Saute pork on medium heat, add taco seasoning mix. When cooked, set aside in oven proof dish.

Fry the cabbage in a large fry pan using water on high. I add 1/2 cup water every 3 minutes or so and cover with a lid until the water evaporates. Once the cabbage starts to become soft and no water is left, add the butter and saute until desired tenderness.

Remove from heat, add onion powder and vinegar.

Combine the cabbage and meat in the oven proof dish. Mix in 1/2 the cheese. Place the remaining cheese on top.

Place in oven for 20 minutes.

Serve with a leafy green salad.

Each serving is approximately 470 calories and contains 3g of carbohydrates.
