Ingredients

2 cansweet potaoes - 40 oz
1 cupsugar
2 largeeggs beaten
1/2 tspsalt
1 stickbutter
1/2 cupevaporated milk
2 tspvanilla
1 packageslg marshmallows
1/2 cupchopped pecans
1/2 cupcoconut

Steps

Whip potatoes

Add sugar,eggs,salt,butter,vanilla,milk

Mix well and put in a 1 1/2 qt casserole dish

Bake in a preheated 325°F oven for 25 min's

Place marshmallows, pecans and coconut on top & return to oven for 5 min's or until top is browned
