recipe was based on recipe from cookbook 'Inter Courses' by martha hopkins and randall lockridge

rinse then drain soaked beans
- 3
combine beans with water in large pot
- 4
bring to boil over medium heat

add the vegetables, seasonings, beer, vinegar to the beans
- 6
simmer covered for 1.5- 2 hours until beans are tender
- 7
garnish with sour cream and chives
- 8
serve with rice, corn bread or tortilla chips
- 9
maybe made nonveg by adding 1 lb of meat your choice

may also be cooked in a slow cooker for 5 hours, just increase water to 5 cups.

We only get a few chili weather days in Southern California, so we are taking advantage of them! (Chili weather being temps in the 60s - don't laugh, Rest of the Country Except Florida. It's all about acclimation. :P )I used Kidney for texture, Pinto for earthy flavor, and Cannellini for creaminess this time, but use whatever beans you like.If you don't care for ground beef, you can sub with ground turkey, chicken, or pork. x -
