First we will cook arbi. You can boil it. Or getting it cook in pressure cooker will be easier. Wash arbi first. Pressure cook it with water and salt. Add turmeric if you like.

Then peel arbi and chop it in small pieces. Take one piece on hand and gently press it. Do same with all.

Now in bowl mix samolina, rice flour, salt, 1/2 tbsp red chilli powder and pinch of turmeric and mix it. Coat pressed arbi in it. Coat it properly and deep fry it.

In tadka pan heat some oil. Around 2 tbsp. Add jeera, hing, curry leaves, coriander leaves, chopped garlic, pinch of salt. And fry it till it become crispy. Take it off the flame and add red chilli powder, panipuri masala, turmeric, dhana jeera powder and mix it.

Pour tadka on fried arbi and gently mix it. Our masala arbi is ready.
