This is the basic recipe, which is the quickest thing I can think of for a weekday meal after work. If you have more time, add chopped peppers and celery to make the dish even more aromatic.

Wash the fillets and place them side by side in a baking dish.

Wash the tomatoes and then give them a light "massage" under warm running water. This softens the skin, making it easier to peel with a knife. Then grate them and pour the juice over the fillets.

Sprinkle the orzo around the fish to fill the gaps in the baking dish and add a little water. The juicier the tomatoes, the less water you'll need to add. Instead of water, you can add vegetable broth, but I find the fresh tomato and fish juices are enough.

Add some olive oil and season with salt and pepper. Finally, crumble the feta over the dish with your fingers.

Cover well with aluminum foil and bake in a preheated oven at 400°F for about 20 minutes.
