Ingredients

Serves 2 servings
  1. 2fresh cod fillets
  2. Extra virgin olive oil (to taste)
  3. 4large, juicy tomatoes
  4. 7-10 ozorzo (or enough to fill your baking dish)
  5. 1little feta cheese for grating
  6. Salt and pepper

Cooking Instructions

    Wash the fillets and place them side by side in a baking dish.

    Wash the tomatoes and then give them a light "massage" under warm running water. This softens the skin, making it easier to peel with a knife. Then grate them and pour the juice over the fillets.

    Sprinkle the orzo around the fish to fill the gaps in the baking dish and add a little water. The juicier the tomatoes, the less water you'll need to add. Instead of water, you can add vegetable broth, but I find the fresh tomato and fish juices are enough.

    Add some olive oil and season with salt and pepper. Finally, crumble the feta over the dish with your fingers.
