Those are large chunks of good meat, with a simple yet excellent rub, grilled to perfection. You can use Ribeye, NY Strip, Sirloin, or any decent, well marbled meat will be fine. Don't get chewy cuts of meat: This dish cooks fast and chewy cuts will not have time to become tender!

Ingredients

4 - 6 servings
  1. 2 lbs (2 inch)thick Beef meat (see above) cut into 2 - 2 1/2 inch chunks
  2. 2 Tablespoonsgood olive oil
  3. 2-3 tablespoonskosher salt
  4. 2 Tablespoonsground Allspice
  5. 3 TablespoonsGarlic Powder
  6. 2-3 TablespoonsAleppo Pepper (I buy mine from Amazon), otherwise, use a medium hot red pepper, don't make it too spicy!
  7. 1 Table spoonTurmeric
  8. 3 TablespoonsPaprika powder

Cooking Instructions

    Place the meat in a large bowl and rub it all over with oil

  2. 2

    Mix all spices then pour over the meat, mix well.

    Let it sit at room temperature for 30- 45 minutes

  4. 4

    Heat grill to high, then place the meat on the grill (no need for skewers!). Turning every 2 minutes.

    Grill for about 8 minutes for medium rare (6 for rare, 10 and above if you like your fine meat totally dead....)

    Serve immediately.
