Ingredients

  1. 2 cupsfresh fenugreek leaves (methi)
  2. 1/2 tspsalt
  3. Sprinkle salt on methi leaves and keep it aside for 15 min
  4. Paste:
  5. 2green chillies
  6. 2 tbspbroken cashewnuts
  7. 1 inchpiece ginger
  8. 2 tsppoppy seeds
  9. 2small cinnamon pieces
  10. 2cloves
  11. 2cardamons
  12. 2black pepper corns
  13. Other ingredients:
  14. 1/2 cuppeas boiled or frozen
  15. 2 tbspoil
  16. 2 tbsptomato paste
  17. 3 tbspsugar or as per your taste
  18. to tasteSalt
  19. 1/4 cupmilk
  20. 2big tbsp Malai
  21. 2 tbspwater

Steps

  1. 1

    Firstly Sprinkle salt on the methi leaves and keep it aside for fifteen minutes. Squeeze out and discard the excess water from the methi leaves to remove the bitterness of the methi leaves.

    Then grind the paste with the given ingredients using little water to.make a fine paste.

  3. 3

    Heat 2 tbsp oil in a pan.Saute methi leaves in a medium flame for 2-3 minutes.Methi is cooked.Keep aside the methi leaves.

    In the same pan add 1 tbsp oil.Add the prepared smooth paste.Saute for 1-2 minutes. Add tomato paste.Cook for 1-2 minutes.Add the sauted fenugreek leaves, sugar, salt, milk and finally cream.Add approximately 2 tbsp water.Mix this well.Cook for 1-2 minutes.Stir occasionally in between.Thick gravy will be formed.Off the flame.

    Your Restaurant Style Methi Matar Malai is ready to serve.

    Serve Piping hot subji with Nan or Parathas.
