Pan de Yuca

This is a traditional Colombian cheese bread, made mainly with yuca starch and cheese. It’s gluten-free and very quick and easy to make, coming out soft and fluffy. There are many versions—here’s mine. This recipe makes 20 pan de yuca, each about 2 oz (60 grams).

Grate the cheese and measure out the rest of the ingredients.

On your work surface, mix all the ingredients together, gradually adding the water as you knead the dough thoroughly.

Knead well for about 15 minutes, until the dough is very smooth and doesn’t stick to your hands or the surface.

Divide the dough into 20 portions, each about 2 oz (60 grams).

Roll each portion into a stick shape.

Shape each stick into a horseshoe.

Place them on a baking sheet, leaving space between each one since they will expand in the oven.

Bake at 400°F for 20 minutes, or until golden brown as desired.

Remove from the baking sheets, let cool, and enjoy.
