Mini Chicken and Waffles

Ingredients

  1. 2chicken breasts
  2. 8mini Eggo waffle sheets (32 mini waffles)
  3. 2eggs
  4. 1/4 cupmilk
  5. 1 1/2 cupflour
  6. 1 1/2 tspbaking powder
  7. 1 tbspsalt
  8. 1 tspblack pepper
  9. 1Canola or peanut oil
  10. 1Syrup

Cooking Instructions

    Cut chicken breasts into bite size pieces.

    In large Ziploc bag, combine eggs and milk.

  3. 3

    Place chicken in egg mixture and seal bag. Place in refrigerator for an hour.

  4. 4

    Combine flour, baking powder, salt, and pepper in a separate large Ziploc bag.

  5. 5

    Take chicken out of egg mixture and place directly into bag with the flour mixture.

  6. 6

    Shake to thoroughly cover all chicken.

  7. 7

    Heat about an inch of oil in pan over medium to medium-high heat. Place chicken in pan and fry (about 5 minutes) turning often.

    Place waffles in oven at 400° for 5 minutes.

  9. 9

    Place a chicken nugget over each mini waffle and drizzle syrup!
