Super-easy, delicious and moist orange cake; Perfect for breakfast with a cup of hot chocolate. This recipe is low in sugar but that's a personal preference, feel free to use more sugar (you can add up to 250g of sugar).

Super-easy, delicious and moist orange cake; Perfect for breakfast with a cup of hot chocolate. This recipe is low in sugar but that's a personal preference, feel free to use more sugar (you can add up to 250g of sugar).

First get your ingredients ready; Zest and juice the oranges and keep them separately. Preheat your oven to 160C; Grease your baking pan with margarine and dust with a bit of flour.

In a bowl, beat your margarine and sugar until light, fluffy and doubled in volume. (you can either do it manually or with an electric mixer).

Next, add your eggs one at a time, beating after each addition.

Once the egg has been fully incorporated into the mix, add your orange juice and zest and mix till combined.

Sift the flour and gently fold it into the mixture with a wooden spatula. You don't need to overwork the batter at this point, just little strokes till the flour gets fully incorporated into the mix.

Pour the mix into your baking pan and bake for 40-45mins or until a skewer inserted into the cake comes out clean.
