Ingredients

12 servings
  1. 1000 gramschopped plums
  2. 250 gramsgolden caster sugar
  3. 1vanilla pod, halved and the seeds scraped out
  4. 1cinnamon stick
  5. 225 mlwater

Cooking Instructions

  1. 1

    Put the water, sugar, cinnamon stick and vanilla pod & seeds into a medium sized saucepan and simmer until the sugar has dissolved

    Carefully add in the chopped plums, bring to the boil then turn down and simmer for 10 minutes until softened

  3. 3

    Strain the liquid into another pan and boil / reduce until thick and syrupy, discarding the vanilla pod and cinnamon stick

  4. 4

    Stir the plums back into the syrup and serve with some plain yogurt such as Koko free-from dairy & soya coconut based brand

    This makes around 12 servings and can be frozen
