Yum! 😋 One of my favorite meals! My mom taught me this recipe when I was little, and now I make it for my family. It's a traditional dish from my country.

Cook the tomato and guajillo chiles in water with a little salt until soft.

Once softened, transfer them to a blender with the garlic clove and a small piece of onion. Blend well. Pour the mixture into a saucepan with a little hot oil and fry the sauce.

FOR THE FILLING: Finely chop the remaining onion and crumble the queso fresco. Mix them together for the filling.

In a nonstick skillet, heat the 1/2 cup oil. Take a cold tortilla, dip it in the red chile sauce, then place it in the hot oil and fry. Remove, add the filling, and roll it up like a taquito.

Serve. Top with chopped lettuce, sour cream, and more red sauce. You can also sprinkle extra cheese on top. Enjoy your delicious Mexican enchiladas—you’ll love them! 😋
