Beef Sweet and Sour Stew Beef Sweet and Sour Stew
This is an adaptation of a recipe from The Explorers Journal, which is a hiker/explorer quarterly I picked up at a Fjallraven store, where my husband bought a raincoat. The original recipe called for "rock tripe" as the protein, which is a mushroom that can be gathered while hiking, as a survival soup. How hikers would source the chicken stock, brown sugar, vinegar etc. I don't know. Jeff Lynch -

I always had e stuffed peppers with ketchup, but I wanted to try something different and thought up this recipe.I think doing Step 2 on plastic wrap will make it easier to clean up ♪Cover the green bell peppers evenly and thinly with katakuriko to prevent the stuffed meat from falling out.Reduce the heat to low at Step 5 and keep shaking the fry pan when you add the ● ingredients to make the sauce thicker. Hamburger Meat with Grated Sweet Onions Hamburger Meat with Grated Sweet Onions
I was inspired by the traditional grated daikon radish garnish on hamburger patties and thought fresh onions could also work. The recipe calls for sweet onions, but ordinary onions are fine. I topped my hamburger with freshly chopped mint since I didn't have any basil on hand. You could also garnish it with different herbs, but I recommend my favorite and easiest garnish, sliced onions. Eggplant, Bell peppers and Chicken with Sweet and Sour Sauce Eggplant, Bell peppers and Chicken with Sweet and Sour Sauce
Green bell peppers and eggplant were in season this summer and autumn in my garden!I added some chicken breast that was on sale for around 100 yen ($1) to make dinner! It looks like sweet and sour pork so I cooked it using a similar sauce. It'll taste better when cooled if you use just a small bit of sauce. It's delicious in bento, too!-It's nice even without doubanjiang spicy bean paste!-Substitute chili oil or ichimi togarashi (japanese red chilli pepper) for the doubanjiang spicy bean paste.-Adding extra bamboo shoot, carrot, onion and shiitake mushrooms would be perfect. Like sweet and sour pork!-Do not stir fry the bell peppers too long or they'll lose their crunchiness.-Reduce the sauce at the end so that ketchup and vinegar are less acidic. Beef chow mein with kale and sweet pepper Beef chow mein with kale and sweet pepper
Chow mein with crispy noodles is one of my all-time favourite things to eat. Usually, if I'm ordering it at a restaurant, I'll get the seafood version with prawns, fish, scallops and other goodies because it has more of the umami funk I love. My wife and daughter aren't quite as fond of that, so for this version I stayed with milder but still delicious beef, which I velvetted to get it as tender as possible. I also used kale and sweet pepper I already had in the fridge. Truthfully, they can be swapped with just about any other veg of your preference. However you go about it, it's gonna be delicious.
