Soak rice noodles in warm water for 40 minutes (not boiling water) or per package instructions.In a pot, saute onions, garlic. (Allow to brown)Then add cut up tomatoes.Add kosher salt and parsley (to liking)Add chicken broth and water to desired soup amount. Leave to boil at like #3 on the stove.While its boiling saute shrimp in wok and set aside.Then boil egg and set asideAfter that strain the noodles from the water and add in the boiling soup. Let boil for another 5 minutes.Get bowl, pour soup and noodles.. then add shrimp and egg. Enjoy
