Drain liquid from beans. Add coconut milk. Make up to 4 cups water with fresh water.

Put all ingredients except rice in pot to boil. Add rice when boiling.

Boil two minutes then reduce to low heat for about 15 minutes until liquid is absorbed.

Fluff and serve.
