Pasta e Fagioli

Pasta e fagioli is usually made with pancetta (Italian bacon), but I prefer using ham. This recipe is from my mother and grandmother, but tweaked a bit.

Pasta e fagioli is usually made with pancetta (Italian bacon), but I prefer using ham. This recipe is from my mother and grandmother, but tweaked a bit.
Steps

In a soup pot, sauté crushed red pepper flakes in olive oil until the flakes just begins to darken in color.

Next, add the onions and ham to the pot and sauté until onions are translucent and a light golden color.

Add celery and carrots and continue sauteing a couple minutes longer. Add beans and crushed tomatoes plus chicken broth, water, wine, bay leaves, salt and pepper.

Bring to a boil then lower heat and cover and simmer for 45 minutes.

Cook pasta separately, adding just before soup is served. Top with grated Parmesan cheese.
