Ingredients

  1. 1 packagesrice noodles (14 ounces)
  2. 4portobella mushrooms, gills removed and sliced
  3. 1 1/2 cupmatchstick carrots
  4. 1 tbspolive oil
  5. 2 clovegarlic, minced
  6. 4green onions (spring onions) sliced on the bias, green tops separate from bottoms
  7. 1/3 cupcreamy peanut butter
  8. 1/3 cupvegetable broth?
  9. 1/3 cupsoy sauce
  10. 1/2 tbsp.Chili garlic sauce
  11. Honey?
  12. Rice vinegar?
  13. 1 cupbean sprouts
  14. 1/2 cupchopped peanuts

Steps

  1. 1

    Prepare noodles according to package directions.

  2. 2

    Saute mushrooms, carrots, and garlic in oil for 5 minutes. add green onion bottoms and continue to saute until mushrooms are tender, about 3 minutes more.

  3. 3

    Meanwhile, combine peanut butter, vegetable broth, soy sauce, sriracha, and red pepper flakes in small bowl.

  4. 4

    Add peanut sauce, bean sprouts, and cooked rice noodles in saute pan. heat until warmed through.

  5. 5

    Garnish with chopped peanuts and green onion tops.
