Ingredients: 1 seedless cucumber run through a spiralizer; 4 tbsp Pb2 (peanut butter powder); 3 tbsp water; 2 tbsp low sodium soy sauce; 2 tbsp rice wine vinegar; 1 tsp toasted sesame oil; 2 tsp honey; 1 tsp chopped garlic; 1 tsp red pepper flakes (or less if you prefer less spicy); 1/2 tsp ground ginger; 1 splenda packet; 3 tbsp chopped peanuts (optional) I omitted to cut back on calor

I had a cucumber salad just like this (or at least I tried!) at a local Thai restaurant. I tried to recreate the flavor but used pb2 powder to cut back on calories. I'm very happy with the results!! Add diced cooked chicken to make it a meal.

Ingredients

1seedless cucumber run through a spiralizer

2 tsphoney
1 tspchopped garlic
1 tspred pepper flakes (or less if you prefer less spicy)
1/2 tspground ginger
1splenda packet
3 tbspchopped peanuts (optional) I omitted to cut back on calor

Steps

Add cucumbers to a bowl. Mix PB2 with water(it will be thick) then whisk in all remaining ingredients.

Pour over cucumbers and allow to chill in refrigerator for at least one hour before serving.
