Microwave potatoes 2 at a time until done let cool then peel off skin

In a soup pot add oil and onion cook until tender then add flour and butter cook on medium heat until just mixed

Boil about 4 cups of water add bullion cubes until dissolved pour over onions and flour let simmer on low (if adding milk i would add it now)

Add seasoning and potatoes , break up potatoes with spoon then add spinach mix well cover and simmer on low for about 10 minutes.

Can be served as a side or the main dish..

For extra spicy soup add 1 extra tsp red pepper flakes. .
