This is one of my favorite dishes—healthy, nutritious, and very filling. I made it for my guests this way and they loved it, so I wanted to share it with you. I hope you enjoy it!

This is one of my favorite dishes—healthy, nutritious, and very filling. I made it for my guests this way and they loved it, so I wanted to share it with you. I hope you enjoy it!

Finely chop the onion, or substitute with 1 tablespoon onion powder (fresh onion is better). Chop the bell peppers, tomatoes, and small onion into small pieces and set aside for later. *Note: You can use just one color of bell pepper if you prefer.

In a large bowl, combine the ground beef, onion, and spices. Mix by hand until well combined.

Shape the mixture into finger-sized logs and insert small skewers or wooden sticks. Place them in the freezer for 20 minutes.

I used small skewers because I grilled them in a skillet or pot.

Remove the kofta from the freezer. Add 1 1/2 tablespoons of oil to the skillet just to prevent sticking, then add the kofta. Cover the skillet or pot and cook for 6 minutes. Uncover, turn the kofta, cover again, and after 7 more minutes, uncover and turn the kofta to the other side. Leave the skillet uncovered to let any excess liquid evaporate. Wait a little, then remove the kofta.

Sauté the vegetables in the same skillet or pot used for grilling the kofta until they pick up the grilled flavor.

Serve the kofta on flatbread with the sautéed vegetables, fried potatoes, tahini sauce or hummus, garlic sauce, ketchup, or any other salads you like. Enjoy!
