Cooking Instructions

Bring a large, heavily salted pan of water to a rolling boil

Chop the head of broccoli into large chunks. Peel the stalk with a speed peeler and chop this too (into slices)

Add the broccoli to the water and set a timer for 4 minutes

Heat the olive oil in a frying pan and add the (chopped bacon)

Fry until the timer beeps. Add 1 more minute to the timer and add the garlic and anchovies to the bacon

Cook for the remaining minute then using a slotted spoon transfer the broccoli to the frying pan.

Add the pasta to the water and cook for 2 mins less than the lowest time shown on the packet

Meanwhile cook the broccoli in the pan, tossing and breaking it up so that it becomes like a sauce. Add a ladle or more of pasta water to allow help this

Just before the pasta time is up, add the cream and cook together well with the broccoli

When the pasta is 2 minutes from cooked, add to the pan and cook with the sauce to your desired level of firmness, add plenty of pasta water to help keep the pasta light and loose. It can drink a lot!

Add the extra virgin olive oil, mix together and serve
