Ingredients

  • 7 largeRed potatoes, boiled till slightly firm
  • 7Eggs, boiled
  • 1/4 cupOlive oil
  • 1/4 cupWhite viniger
  • 1 tspeach, Salt and Pepper
  • 1 tbspCelery Seed
  • 1 tbspSugar
  • 1 tbspParsley
  • 1/2 mediumOnion small chop
  • 3 stalkCelery small chop
  • 2 cupHellmans Mayo

Steps

  1. 1

    Boil and drain potatoes and eggs.

  2. 2

    Make a marinade with remaining ingredients EXCEPT mayo.

    While potatoes are still warm, peel and chop. Add to marinade and stir as you go.

  4. 4

    Peel and chop eggs. Add to bowl.

    Add mayo and fold gently but throughly.

  6. 6

    Refrigerate at least 3 hours. Stir before serving. Adjust s&p if necessary.
