Pisto (Spanish ratatouille)

It's courgette season in my garden. And I have this lovely yellow courgette plant in a big pot and it really is productive. So this is my favorite recipe to use up the glut. There are many variations to pisto recipe depending on the region of Spain. This is the one my mum used to cook. The potatoes gave it that child friendly taste for veg haters. I hope you like it

Sautee the chopped onion until soft but not coloured. Use a dash of olive oil.

Add chopped pepper and carry on cooking to soften it.

Peel tomato,chop and add to the pan to cook. Add a pinch of salt.

Chop courgettes.

Add to the rest of veg and cook slowly stirring so that it doesn't stick to the bottom.

Cover to let it cook

Chop potatoes in cubes and fry in plenty hot oil

Add fried potato cubes to vegetables

Stir while you add the egg. You don't need to add the egg but it binds it at the end. You may want to leave this step until just before serving.
