Ingredients

4 servings
  • 1eggplant (aubergine)
  • 2garlic cloves
  • 1 cupboiling water
  • 1 cupinstant couscous
  • 1handful pitted olives
  • 4tomatoes
  • 2 tsprosemary, finely chopped
  • 1 tspground paprika and cayenne pepper
  • 1salt
  • 1a few tablespoons of extra virgin olive oil

  1. 1

    Heat some oil in a skillet over high heat. Add cubed eggplant. When nicely browned, turn down the heat

  2. 2

    Continue frying the eggplant until soft, add minced garlic. When fragrant, add boiling water and couscous. Take off heat and cover with a lid

  3. 3

    After 10 min, fluff the couscous with a fork, then add chopped olives, cubed tomatoes, rosemary, salt and paprika

  4. 4

    Drizzle with olive oil and serve warm. Enjoy :)
