Chickpea "cookie dough"

There are recipes for chickpea cookie dough everywhere on pinterest. This is my own version which I like very much. You can't really taste the chickpeas. The "dough" should be refrigerated and served cold. It has a very similar consistency to ice cream! (but if you store it in the freezer it's gonna freeze rock solid and will need thawing).

Ingredients

8 servings
  1. 8dates, soaked
  2. 250 gramscooked chickpeas (or canned)
  3. 2 tbsppeanut butter (or other nut butter)
  4. 1 tspcarob powder (or cocoa)
  5. 1/4 tspvanilla extract
  6. almond milk
  7. agave syrup
  8. 50 gramsmini chocolate chips

Cooking Instructions

    Process the soaked dates in a food processor until smooth. You may need to scrape the sides occasionally.

    Add the chickpeas and process again until smooth.

  3. 3

    Add the rest of the ingredients EXCEPT for the chocolate chips and process until smooth.

    If the mixture is too thick, thin it out with almond milk. Add a couple of tbsp each time and blend.

    If you find the mixture not sweet at all, add a couple tbsp of agave syrup. The dates normally give enough sweetness. Keep in mind that the chocolate chips are gonna make it even sweeter so don't add too much syrup.

    Stir in the chocolate chips.

    Refrigerate, serve and enjoy :)
