  1. Sauté Ingredients
  2. 400 gramsPasta
  3. 2 tspolive oil, extra virgin
  4. 4 clovegarlic, minced
  5. 1/2chopped onion
  6. 1 ozfresh baby spinach
  7. 1freshly grated parmesan cheese
  8. 1 lbchicken strips
  9. Herb & Balsamic Vinaigrette
  10. 1/4 cupolive oil
  11. 2 tbspbalsamic vinegar cream
  12. 2 tbspwhite wine
  13. 2 tbspfresh parsley, finely chopped
  14. 1/2 tspsalt

  1. 1

    Place the spinach in a covered pan over low heat for about 4 min. Chop ans set aside when done.

  2. 2

    In the same pan sauté the onion, chicken and garlic until chicken is lightly brown.

  3. 3

    Minewhile in a small bowl, whisk together vinaigrette ingredients (olive oil, balsamic, white wine, pasley and salt) until well-blended.

  4. 4

    In a large pot, boil salted water, and cook pasta al dente and drain.

  5. 5

    Put the drainrd pasta back into the pot and put in the spinach, the vinaigrette and the grated parmesan. Stir well and serve.
