Grilled Roast Beef and Cheese

Ingredients

  1. 1 lbthin sliced deli roast beef
  2. 1 lbsliced sharp cheddar cheese or your favorite cheese
  3. 8 slicemarble rye bread or your favorite type of bread
  4. 1/2 cupmayonnaise
  5. 1/2 tspblack pepper
  6. 1/2 tsphot sauce such as Frank's original
  7. 1 tspDijon mustard
  8. 2 tbspbutter

Cooking Instructions

    In a bowl combine mayonnaise, pepper, hot sauce and dijon mustard

  2. 2

    spread mixture evenly on one side of each bread sluce then evenly divide cheese on top of this .

  3. 3

    Now make 4 piles of roast beef and sandwich each one between the bread so that the roast beef is in the middle of the cheese covered bread to make 4 sandwiches

  4. 4

    Butter outside of sandwiches and heat a large skillet or griddle and cook both sides if sandwich until golden and cheese melts.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
