Ingredients

  1. Spices---------
  2. 1 teaspoonsalt
  3. 1/2 teaspooncelery salt
  4. 1/2 teaspoonground ginger
  5. 1/2 teaspoonground allspice
  6. 1/2 teaspoonground cinnamon
  7. 1/2 teaspoonground black pepper
  8. 1/4 teaspooncayenne pepper
  9. 1/2 teaspoonground nutmeg
  10. 1/4 teaspoonground cloves
  11. 1/2 cuplight brown sugar
  12. 3 leafBay leaves
  13. Roast------------
  14. 2 stalkscelery chopped
  15. 2large carrots
  16. 1large onion thinly sliced
  17. 1 stickbutter softened to room temperature
  18. 29 ouncescanned peaches with juices
  19. 5 poundBoston Butt pork blade roast bone in
  20. 1/2 cupBrandy Amber in color
  21. 1 teaspoonred wine vinegar
  22. 8 ounceswhole mushroom I used white button mushrooms
  23. To thicken just a bit-----------
  24. 3 tablespoonwater
  25. 2 tablespoonsflour

Cooking Instructions

    Preheat oven 400 degrees Fahrenheit

    Peel and chop the carrots and slice the onion. Chop the celery

  3. 3

    Gather your spices

  4. 4

    Mix the spices with softened butter. Coat the roast with butter and spices.

  5. 5

    Slice the peaches to manageable pieces add to vegetables in bottom of the roaster. Add peach juices from can.

    Score the mushrooms in a circular form around the caps. Surrounding the pork roast and pour the Brandy over the shrooms

  7. 7

    Add everything to a roaster cover and roast in oven for 2-1/2 hours. Add the red wine vinegar. Put on a burner, mix the water and flour. Then add to the juices and stir till thickened and simmer 7 minutes.

    Let rest for 10 minutes remove the bone.

    Shred the pork and mix well serve.
