Preheat the oven to gas 4 / 180C / 350°F

Fry off the bacon until crispy then remove from the pan with a slotted spoon and drain, reserving 1tbsp of the bacon drippings

Fry the onion in the drippings for around 3 minutes then add the garlic. Cook until the onion is translucent

Remove the pan from the heat, add back in the bacon and breadcrumbs and toss together

Remove the apple cores with a sharp knife. Don't cut all the way through, the apples need a base or the filling will leak out. Aim for a hole about 1 inch wide and 2 inches deep so your coring 3/4 of the apple

Carve a face with a paring knife or pumpkin carving tool onto each apple
- 7
When the filling has cooled, stir in 1tbsp of the balsamic, the mustard, parmesan/yeast and sunflower spread

Stuff the filling into the apples and put them on a baking tray with the carved sides facing outwards
- 9
Brush the remaining balsamic over the apples, in particular the carved faces
- 10
Bake for 60 - 90 minutes or until the apples are soft
