Ingredients

  1. 4 cupwhole grain rice
  2. 1 tbspEarthbalance vegan butter
  3. 1 packagesMelissa's Extra Firm Tofu
  4. 1 cupVegetable broth
  5. 1/4 cupRealLemon Juice
  6. 1 smallhandful carrot chips
  7. 1 smallhandful cauliflower
  8. 1 smallhandful broccoli florets
  9. 1 packagesSugar snap peas
  10. cupDaiya nondairy lactose free cheese shreads
  11. 3Bok Choy leaves
  12. 3Napa Cabbage leaves
  13. mediumhandfull spinach leaves

Steps

  1. 1

    Prep. Tofu for use: Slice and press for 45 minutes (to drain water out)

  2. 2

    Broccoli, Bok Choy and Napa Cabbage prep: Wash and cut leafy greens from stems. Use only broccoli florets.

  3. 3

    In pan combine Vegetable broth, rice, butter, tofu, and reallemon juice. Scramble tofu and mix well. Let cook until rice is tender.

  4. 4

    Mix in sugar snap peas, carrots, broccoli florets, cauliflower, and daiya cheese. Mix well. Let cook until cheese melts.

  5. 5

    Stir in Spinach, Bok Choy, and Napa Cabage leaves. Let sit on heat for a few minutes.

The stuff i cook is vegan, and do substitute to what i eat, because of allergies etc some may be old. i am on a rx meal plan not allowed to use food with lactose/treenuts.
