Veg Fried rice is a complete and healthy meal made with rice and all the nourishing vegetables like broccoli, mushrooms, carrots, capsicum etc.

Boil rice till just done.

Chop all the vegetables. Heat a wok or broad pan. Add 2 tsp oil. Add chopped onion and fry for 5 minutes. Add ginger garlic paste. Fry for 1 minute

Add all the chopped vegetables reserving greens of the spring onion. Stir fry for 5 minutes. Add salt, pepper, red chilli powder, jeer a powder and cinnamon powder.

Cover and cook for 5 more minutes. Add boiled rice, soya sauce, vinegar and tomato sauce. Mix lightly. Cover for 2 minutes.

Switch off the gas and sprinkle greens of spring onion and serve immediately.
