An excellent frosting to use if you have no powdered sugar, and aren't worried about low fat

Ingredients

  1. 1 cupmilk
  2. 2 tbspall purpose flour
  3. 1 cupbutter, room temperature
  4. 1 cupwhite sugar
  5. 1 tspvanilla extract

Cooking Instructions

    In a small saucepan, combine milk and flour and bring to a boil, whisking constantly.

    Continue whisking over medium/low heat until mixture thickens and becomes difficult to stir.

    Remove from heat and allow to cool completely. This step works well when done right after the cake or cupcakes go into the oven.

    In a bowl, cream together butter, sugar, and vanilla. Don't rush this, beat the mixture for at least 5 minutes.

    Add half of the cooled thickened milk and beat for 4 minutes.

    Add in the rest of the thickened milk and beat for another 4 minutes. Finished product should resemble thick whipped cream.

    Makes about 3 1/2 cups of frosting. You can also add cinnamon or cocoa powder to the butter/sugar mix for different flavours.
