My husband loves the Stouffer's Grandma's Chicken Bake, but it only comes in a family size... And it just isn't big enough. I played around until I actually like mine better. This is perfect for a FREEZER CASSEROLE....do not add corn flakes until ready to bake. Sometime a bake chicken or have leftover turkey. I bake a lot of chicken in one day and de- bone so that it is fixed for quesadillas, chicken salads etc. I freeze the done chicken to help with time. Baked or rotisserie chicken taste much better...

Ingredients

  • Grandma's Chicken and Rice Filling
  • 2 cupbaked chicken..can use canned or rotisserie chicken
  • 1/2 cupmayonnaise. not SALAD DRESSING!!!
  • 1 canbroccoli and cheese soup
  • 1 cancream of mushroom soup
  • 1 cupbroccoli (frozen)
  • 1 cansliced carrots
  • 2 cupcooked rice
  • 2 cupshredded cheese
  • 1/2 cupchicken broth or milk (optional)
  • topping
  • 1 cupcorn flakes (crushed)
  • 4 tbspbutter, melted
  • if baking a chicken
  • 4leg quarters
  • 1/4 tspground thyme
  • 1/4 tspseason salt (like Lawry's)
  • 1/4 tspground black pepper
  • 2 stalkscelery, minced
  • 1/4 cuponion, minced
  • 1 cupbell pepper (green, red, and yellow) I use frozen... its cheaper

    Basically I use leg quarters because I love the taste better. The thighs can be deboned before cooking. This meal is a perfect (FREEZER CASSEROLE).

    If you are using pre-cooked chicken go to step #5

  3. 3

    If FREEZING do not add CORN FLAKES or BUTTER. It will be soggy.

    IF YOU ARE BAKING YOUR OWN CHICKEN.... Put 4 leg quarters in a large bowl. Put everything on the chicken in the bowl. Use the ingredients listed for baking only. Rub all the spices into chicken by hand. Place in a baking dish cover with foil and cook at 375° for 1 1/2 hours. Take it out and open the foil and allow to cool. I use the baking broth mixed with the soups for flavor.

    Put all ingredients for the casserole in a baking dish... I use disposable aluminum pans when I freeze this. If you use pre cooked chicken add about 1/2 cup of milk to mix soups.

    Mix well put the crushed corn flakes on top and drizzle melted butter on top.

    Bake casserole uncovered... For 35-40 minutes at 350°.

    If frozen allow to thaw before baking.
