Ingredients

  • 1/4 cupolive oil (for sautéing)
  • 1 1/2 cuponion, chopped
  • 2 tspminced garlic
  • 1 1/2 tspsalt
  • 1/4 tspcrushed red pepper, or flakes
  • 1bay leaf
  • 1 1/2 cuppetite diced tomatoes (14.5 oz can)
  • 2 1/4 cupwater
  • 2 tbspfresh or dried parsley
  • 2 tbspfresh or dried cilantro
  • 1 1/2 cupwhite long grain rice

Steps

  1. 1

    In a 4-quart medium pan heat olive oil over medium-high heat. Add onion, cook about 4 minutes or until soft.

  2. 2

    Add garlic, salt, red pepper, & bay leaf; cook 1 min

  3. 3

    Add tomatoes, cook 2 minutes then add water, parsley, and cilantro. Bring back to a boil then add rice.

    Boil, stir, cover pot and reduce heat. Cook 20 min then let set for 5 minutes and fluff with fork and serve.
