Our son is a pancake freak, we were out of pancake mix but had some muffin mix... tried out different ways and found out one egg does the job and tastes way better than regular pancakes! We like adding bananas yumm!

  • 1 packagesMartha White muffin mix (any flavor)
  • 1egg
  • 2/3 cupmilk
  • 1syrup
  • 1optional fruit

    Heat skillet to 350 or medium high. Combine egg, milk and muffin mix in medium bowl; stir just until large lumps disappear (batter will be slightly lumply)

    Melt butter on skillet, For each pancake, pour about 1/8 cup batter onto hot griddle. Cook 1-2 mins or until bubbles begin to break on surface. Turn; Cook 1-2 mins on the other side also or until golden brown.

This was great! It was a bit thin so half way I added some pancake mix. It was great both ways!
