Smoked Mackerel Sauce

This sauce is one my Late Mum made every other Saturday with very soft boiled yam (you know, Saturday morning meals are always on point..lol). This is one sauce I can never get tired of eating because it's tasty, healthy and really easy to make.

Smoked Mackerel Sauce

Steps

Shred your smoked mackerel and set aside.

Blend the tomatoes, scotch bonnet peppers and 1 onion roughly and set aside.

The remaining onion should be finely diced.

Pour the Oil into your saucepan and heat the oil for about 1 minute. Add the diced onion and garlic (if you're using it) to the oil and let it fry lightly for about 2 minutes OR when you can perceive the aroma of the fried garlic.

Add your blended pepper to the saucepan and let it fry for till it is halfway thickened.

Add your shredded mackerel and seasoning cubes to the sauce and let it fry till you can see oil bubbles on the sauce. Taste for seasoning.

Voila! your delicious sauce is ready to be enjoyed alongside boiled yam, boiled rice, boiled potatoes or even plantains.
