One day i was working at my job (Sobys Southern Cuisine, Greenville Sc) and i was trying to eat better so i thought OK I'm eating chicken tonight, now what do i want to add to it. Ingredients

  1. 1Chicken Breast
  2. 1Shallot
  3. 3 cloveGarlic
  4. 1/4 cupRed Bell Pepper or Roasted Red Pepper or and Sweet Peppers
  5. 2Fresh Squeezed Orange (Juice)
  6. 1 cupSpinach
  7. 2 pinchFresh Parsley
  8. Salt and Pepper
  9. Vegetable Oil

Steps

    Season chicken with salt and pepper.

  2. 2

    Add v.oil to saute pan and turn on medium heat. Saute the chicken for about 5 minutes. (Chicken should not be fully cooked). Remove and sit aside.

  3. 3

    Add shallots and red bell peppers to pan and saute for a minute.

  4. 4

    Deglaze the pan with fresh squeezed orange juice and reduce down for about 2-3 minutes

  5. 5

    At spinach and parley. Allow the spinach to shrink. Add salt and pepper to taste and serve immediately.

Im originally from Georgia. Ive always loved cooking i started at a young age with a big family who also love you cook always having big dinners, cook outs, birthdays, graduations, etc. Grew up knowing that i wanted to work with food but never knew what i wanted to do. Eventually moved to Greenville South Carolina where i graduated college for culinary arts in 2014, plus started working in the number one restaurant in the upstate. I then learned being in the kitchen with fresh ingredients that i was a natural cook and itis very simple. Which made me want to teach others who may think it's complicated or just don't get it the chance to make beautiful full of flavor dishes.
