Wanted a special cake for my mum on Mothers Day. She hates chocolate and I was almost lost till I stumbled on this recipe. She loooooved it and its now her favourite cake too. The recipe is from the Cake Boss site

Ingredients

4 1/2 cupcake flour
2 tspbaking powder
1 1/2 tspbaking soda
1 tspsalt
2 cupbuttermilk
2 tbsplemon zest
2 tsplemon juice
1/2 cupunsalted butter
1/2 cupoil
1 1/2 cupgranulated sugar
1large egg whites
2large whole eggs

Steps

Preheat oven to 325°F. Grease and flour your baking tray and line with parchment paper

Sift all the dry ingredients except sugar and set aside

Combine buttermilk, lemon zest and lemon juice and set aside

Beat butter, oil and sugar until pale and fluffy for about 3 minutes in an electric mixer

Reduce speed and add egg white then whole eggs and mix until combined

Reduce speed to low and add dry ingredients in 3 batches alternating with buttermilk starting and ending with the dry ingredients. DO NOT OVERMIX!

Pour batter in the prepared pan and bake for 30-40 minutes or till done (when a toothpick inserted in the centre of the cake comes out clean)

Let cake cool and frost as desired. ENJOY!

I discovered my love for cooking a few years ago. Since eating out is expensive i figured i had some learning to do. Living in a very small town(i doubt it can even be called that) where you cant always find what you wanted also pushed me towards doing it on my own. I am Zimbabwean by the way.I think the internet is the best invention ever since i can look up recipes, try and modify them to suit my preferences. I love sampling dishes from different countries and of course stories behind them
