Taco Bake (gluten-free)

Can substitute regular baking mix cup for cup, but use half of the water & half of the butter. Also regular taco seasoning can be used instead of the gluten-free.

Ingredients

  1. 1 1/2 cupgluten-free baking mix
  2. 1/2 cupYellow cornmeal
  3. 1/2 cupcold water
  4. 1/2 cupbutter, melted
  5. 1 lbground beef
  6. 1 envelopeTaco seasoning (1 1/4 oz) (gluten-free)
  7. 3/4 cupwater
  8. 16 ozrefried beans
  9. 1 1/2 cupshredded cheddar cheese

Cooking Instructions

    Heat oven to 425°F. Grease casserole dish.

    Mix baking mix, cornmeal, 1/2 cup water, & butter. Pat into dish to form bottom layer. Bake 10 minutes.

    Cook & stir beef until brown; drain. Stir in taco seasoning & 3/4 cup water. Heat to boiling, stirring frequently. Reduce heat. Simmer uncovered, stirring occasionally until thickened, 5-10 minutes.

    Spread beans over baked crust. Top with beef mixture. Sprinkle with cheese. Bake 10 minutes longer.

    Top with desired toppings, such as lettuce, tomato, onions, taco sauce, sour cream, etc.
