Ingredients

  1. 1 lbground beef
  2. 1/2 cuponion, chopped
  3. 1 packagestaco seasoning
  4. 1/2 cupsalsa
  5. 1 canblack beans
  6. 1 canrotel
  7. 1 1/2 cupinstant rice
  8. 2 cupColby Jack cheese, shredded
  9. 1/2 cupcorn chips, crushed

Cooking Instructions

    brown ground beef and onion in skillet; drain.

    Add taco seasoning, rotel, salsa, beans and 1 cup water.

  3. 3

    Bring to a boil, cover and reduce heat.

  4. 4

    Simmer for 20 minutes, stirring occasionally.

  5. 5

    Heat oven to 400°F.

  6. 6

    Add another cup of water to meat mixture and return to a boil.

  7. 7

    Remove from heat. Add rice, stir and cover.

  8. 8

    Let sit for 5 minutes. Pour into a 8 x 8 baking dish.

    Top with shredded cheese and crushed corn chips.

    Bake about 10 minutes or until bubble and browned on top.

    Serve with sour cream, chopped onions and/or shredded lettuce.
